Red, White and Blue KabobsPatriotic Recipes

If you are trying to stick to a patriotic themed party for Memorial Day Weekend, you can look no more for a main entrée from the grill. These red white and blue kabobs are healthy and festive. 

Ingredients: 

1 lb. boneless skinless chicken breast cut into cubes
Wooden or stainless skewers - 4-6
Cherry tomatoes 15-20 total
Eggplant chopped into cubes
Favorite chicken marinade - I use lemon pepper (½ c olive oil, the juice of 3-4 lemons, rosemary, thyme, oregano, salt and pepper to taste)

Directions:

Marinate vegetables for at least 30 min. Place veggies and chicken on skewers. Grill for 8-10 min. on each side or until chicken is done and juices run clear.

Red, White and Blue Warm Cobbler

A healthy and patriotic twist to dessert or a sweet craving. Bring this patriotic dish to your Memorial Day gathering and it will be a hit! Not to mention it is gluten free and there are dairy free alternatives listed too.

Ingredients:

For the topping:

1 cup gluten free all-purpose flour
1/2 cup raw honey or pure maple syrup
¼ c coconut raw sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter, cut into pieces or 1/2 c coconut oil
1 cup chopped pecans

For the cobbler:

1/3 cup honey
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
4 apples or peaches - peeled, cored and chopped (fuji, gala, or granny smith or seasonal peach)
2 cups of frozen mixed berries (cherries, raspberries, strawberries, blackberries, or blueberries)
2 tablespoons lemon juice
Garnish with vanilla coconut ice cream or Greek yogurt

Directions:

1. For the topping - Mix flour, honey, coconut sugar, 1/2 teaspoon cinnamon, nutmeg, and salt together in a bowl. Combine butter with the flour mixture using fingers or a fork until coarse crumbs form. Stir in pecans and set aside.

2. Whisk together 1/3 cup honey, cornstarch, ginger, and 1/2 teaspoon cinnamon. Place the apples in a slow cooker, stir in the cornstarch mixture; toss with lemon juice. Sprinkle the pecan crumb topping on top. Cover and cook on High for 2 hours or Low for 4 hours, until apples are tender. Partially uncover the slow cooker to allow the topping to harden, about 1 hour. Serve with the coconut ice cream or vanilla Greek yogurt.

Berry, Feta, Spinach Chicken Salad

Looking for a salad for Memorial Day Weekend festivities? This salad is red, white and blue with lots of healthy greens too!

Ingredients:

1 lb. boneless skinless chicken breast cooked and sliced thin
1 bag or tub of baby spinach leaves or spring mix if you prefer
Fresh strawberries and blueberries
Feta cheese
Homemade vinaigrette dressing (½ c olive oil, ¼ c balsamic vinegar, 2 Tbs. honey and salt and pepper to taste)

Directions:

Toss all ingredients together in bowl and serve. Dressing can be served on side or tossed into salad.

Star Spangled Banner Sangria

Try this sangria served in wine glasses or even mason jars. The only sugar in the sangria is from the fruit and of course the wine.

Ingredients:

2 bottles white wine (Sauvignon Blanc, Chardonnay)
1 cup triple sec
1/2 cup berry-flavored vodka
1/2 cup freshly squeezed lime juice
1/2 cup stevia based sweetener
1 cup blueberries
1 1/2 cups hulled and sliced strawberries
1 cup raspberries
1 1/2 cups chopped star fruit

Directions:

Combine all ingredients in a large punch bowl or pitcher and stir well. Cover and refrigerate at least 4 hours. Serve chilled and make sure to get fruit in each glass.
