Christmas Tree Pita Appetizer

Modified from our friends at Betty Crocker ®

Having festive themed appetizers in the shape of a Christmas tree will give any host bonus points, especially if there are kids at your gathering!  This appetizer is not only fun but it is actually a healthy treat, rich in both heart healthy omega 3 fatty acids from the homemade guacamole and vitamin C from the chopped red bell peppers.

Ingredients: Christmas Tree Pita Appetizer

3 large wheat pita rounds

18 small pretzel sticks

1 red bell pepper chopped

For homemade guacamole...

3 ripe avocados

1 jalapeno- seeded and chopped

¼ red onion chopped

¼ c chopped fresh cilantro

1 tsp. garlic

Juice of 1 lime

Directions:

1.  Using a pizza cutter cut each pita round into 6 wedges (or trees)

2.  Pierce pretzels into the bottom of each pita triangle, as "trunk"

3.  Toast pita rounds in oven for 2-3 minutes on 350 degrees

  • BONUS - If you have extra festive energy you can use a Christmas tree cookie cutter instead of triangles. If you decide to use cookie cutters it will take approximately 6 pita rounds to get 18 servings due to some waste.

For guacamole- place peeled and seeded avocados, chopped red onion, jalapeno (remove seeds if you do not like too spicy), cilantro, garlic and lime juice in food processor and blend till smooth, it's okay to be a little chunky texture. 

Spread fresh guacamole over each pita triangle, sprinkle chopped red bell pepper over pitas, plate on serving platter and SERVE!
